Lauki (bottle gourd) is a simple yet wholesome vegetable packed with nutrients and a naturally mild taste that absorbs spices beautifully. Ingredients:

  • 500g lauki (bottle gourd), peeled and chopped
  • 1 – 2 tbsps (25-50g) Handi Mix
  • 1 – 2 tbsp oil
  • 1 – 1 1/2 glass water (250-375ml)
  • Red Chillies (If you like it hot)
  • Salt to taste (If Needed)
  • Fresh coriander (for garnish)

Dos & Don’ts:

Do cook on low heat to retain lauki’s mild sweetness.
Do add water sparingly, as lauki releases its own moisture.
Don’t overcook; lauki should be soft but not mushy.
Don’t skip the coriander garnish—it adds freshness to the dish!

Quick Method:

  • Add the oil in the pan with medium heat.
  • Add all chopped lauki into the pan.
  • Add water & Handi Mix paste and stir until paste is mixed well in water.
  • Cover the pan with the lid. Let it simmer for 15-20 minutes until the lauki gets tender.
  • Add coriander leaves and serve hot!
